Description:
This wine has a pale crystalline Ruby Red color, with a savory and captivating aroma typical of the grape , with elegant and sumptuous notes typical of Corvina in Purity , with a body and structure important for both elegance and delicacy , an important and elegant tannins and always pleasant .
Vinification:
The grapes are harvested early October late ripening, to get the best from the berry without losing elegance but increasing the typical aromas , Vinified in steel in red but at a controlled temperature with the use of particular extracting and aromatic yeasts able to enhance the peculiarity’ of the grape . The cleaning of the wine from the heavy lees is then followed by decanting aimed at separating the heaviest lees without sacrificing the structure of the wine followed by delicate pumping over to keep the most elegant lees in suspension to give stability to color and structure and elegance.
Area of production:
The grapes are selected from our vineyards south of Lake Garda mainly in the municipality of Sona Soil : White clay soil but with coarse texture of hill permeable by PH Alkaline
Aging : The Corvina is aged in tanks and wooden barrels, to encourage the “smoothing” of tannins , andthen 6 months in the bottle before being put on sale. The strong wine of its own structure lends itself toaging for periods even longer than 5 years without feelingthe weather but improving complexity and elegance.
